INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cut into small pieces
  • 1 large organic egg
  • 1 teaspoon pure vanilla extract
  • ½ cup walnut toasted
  • 225 grams (about 1 & 1/3 cup) seedless dates
  • 1 cup boiling water
  • 1 teaspoon baking soda

 

METHOD

Pre heat the oven to 180 degree Celsius. Butter a loaf pan.

Toast the walnuts from 6-8 mins or until lightly browned and fragrant. Let it cool and then chop.

In a bowl, mix the chopped dates with the baking soda & a pinch of salt. Pour 1 cup boiling water over the dates, stir & leave to cool for 40 mins.

In a food processor mix together the flour, sugar, baking powder, ground cinnamon, salt & butter.

Process until the mixture resembles coarse breadcrumbs. Transfer the mixture into a large bowl and then stir in the walnuts.

In another bowl stir in the egg and vanilla extract.

Fold the flour mixture and beaten egg mixture into the cooled dates (with their water). Mix until combined.

Scrape the batter into the prepared loaf pan and bake until the bread has risen and a toothpick inserted in the center comes out clean. Place on a wire rack to cool.
